Blackened Chicken Bowl w Blueberry Basil Salsa

I N G R I E D I E N T S

  • Cilantro Lime Rice

    • White Rice

    • 1 tbsp of ghee or butter

    • 1/3 Cup Cilantro

    • 2 Limes

  • Blackened Chicken

    • Mary’s Organic Chicken

    • 2 tbsp Olive Oil

    • Salt, Pepper, Garlic, Onion, Smoked Paprika

  • Roasted Zucchini

    • 2 Zucchini’s

    • Salt, Pepper, Garlic Powder, Red Pepper Flakes

  • Blueberry Basil Salsa

    • 1 cup Blueberries

    • 1 Nectarine

    • 1 Jalepeno

    • 1/3 cup White Onion

    • 1/3 cup cilantro

    • ¼ cup basil

    • 1 Lime

    • Salt (to taste)

I N S T R U C T I O N S

  • Cilantro Lime Rice

    • 1 cup white rice to 2 cups of water

    • Add tbsp of Ghee

    • When cooked add in fresh cilantro & lime juice

  • Blackened Chicken

    • Preheat oven to 425

    • Massage olive oil onto each side

    • Cover chicken in seasoning — both sides

    • Starting with skin side down, cook 25-30 min each side (or until internal temp has reached 165)

  • Roasted Zucchini

    • Coat zucchini on both sides with seasoning

    • Bake with chicken at 425 for 20 min on each side

  • Blueberry Basil Salsa

    • Mix in all salsa ingredients and let marinate in the fridge while the rest of your meal cooks
